"Tonight's gonna be a good night..." hahah, NO. I am NOT referring to the song some people crank up while getting "hooched up" for a night out on the town. I am referring to the pale bean with a black spot that my mom always cooked on New Years, to bring us luck for the new year. My pot of beans is on the stove (in my brand new Martha Stewart cast iron pot I got for Christmas), simmering with some pork fat back for seasoning. I like to eat my beans with fresh made corn muffins, straight out of the Jiffy box. Call me a redneck, but this is really the best corn muffin mix, in my opinion.
